I found your blog looking for a seitan recipe. I’m going to try the foil wrapped one. I decided to look at the rest of your blog and read some of your posts (updates) and then saw your pics. You look amazing. Keep up your good work. Thanks for posting.
I sooooo wish I could still eat Seitan. But since it’s made from wheat gluten it’s off limits for me now. Boo!

I've lost over a hundred pounds and kept almost all of it off until cancer came to town. I'm in remission now and working to lose the 35+ pounds I put on during all that resting. Back to work!
