Yummy Tofu Scramble plus Tofurky breakfast

I had to pop back in and post this recipe because AHEM..the husband is STILL asleep!

I had a package of tofu that I wanted to use up before tomorrow so I made a tasty tofu scramble to take with us today for sandwiches after our run. This turned out so great! Plus, I wanted to share a shot of this amazing hot sauce that makes anything taste good. I’m all about the hot and spicy.

Chezzy Tofu Scramble

1 pound firm tofu (I used cubed)
1/2 cup nutritional yeast flakes
1/4 cup apple cider vinegar
1/4 cup water or soy/rice milk
2/3 teaspoon salt
1 1/2 teaspoon chili powder
1/4 t. Pepper
1 T Braggs Liquid Aminos, soy sauce or tamari
2 t. oil
1/2 t. onion powder
1 teaspoon hot sauce (optional)
3 to 4 tortillas or slices of whole wheat bread

Drain tofu then squeeze rest of liquid out (between paper towels works well). Add oil to pan, pour in tofu and cook for 3 minutes. In a separate bowl, mix: nutritional yeast flakes, water, soy sauce, salt, pepper, chili powder, vinegar. Basically, mix the rest of the stuff! After the tofu has cooked for 3 minutes, pour the contents of the bowl over the tofu and let it cook a few more minutes, till all of the liquid has been absorbed.

Makes 3 to 4 servings. If you make it 3 servings it’s about 150calories per serving, plus extra for your bread or tortilla.

And lastly: Breakfast food porn!

1 corn tortilla
1 tofurky Kilbasa sausage
1/4 c. shredded vegan cheese
Cut up sausage and cook with a tiny bit of oil to brown, add 2 t. hot sauce and 1/4 c. of water and let the sausage steam for a minute until water is evaporated. Put corn tortilla on cookie sheet and layer with the tofurky sausage and cheese. Cook on broil for a few minutes and top with 1 T. salsa. 1 serving is about 380 calories! Excellent dish 🙂

  1. girl, I thought your nutritional yeast made it look so cheesy for a second! I was amazed! bahaha. i think I might make myself a tofu scramble in the AM 🙂
