Whole Wheat Blueberry Pecan Pancakes

1 c. whole wheat flour
1/8 t. salt
1/4 t. cinnamon
1 1/2 t. baking powder
1 1/2 T. sugar
1 c. rice or soy milk (I used just water)
1/4 c. blueberries
1/4 c. chopped pecans
1 T. syrup (included in calorie count)

Makes 8 pancakes (about 3-4″ across)-4 servings

  1. HOLY YUM!
    This is such a simple recipe too. Sometimes I shy away from vegan breakfast recipes and lean towards fruit/nut butter because I’m NOT a morning person..I can’t bake in the AM. THIS sounds awesome! LOVE IT 🙂
