Great Vegetarian Pasta Dish-creamy goodness without the cream!


In an effort to make something that wasn’t “southwestern” I created this and I think it’s so good!

4 1/2 c. of whole wheat pasta-dry (put this on to boil while you pull together the rest of the ingredients)

2 c. frozen mixed stir fry veggies (or anything else you like-put these on to warm up)

In a large bowl, mix together:
1 T. garlic powder
1 T. onion powder
4 T. nutritional yeast flakes (more on that in a minute)
1 T. Cajun spice (You can get this at any grocery store. I buy it in 3 different states.)
1 T. dried parsley
2 T. olive oil
1 T. sesame seed oil
4 T. parmesan cheese-the dried stuff
Then add to this spice mix:
1/2 c. pepperochini’s (the little yellow pepper strips you can get in a jar-aren’t hot)
1 C. of black beans
And your drained, warmed up, frozen veggies.

When the whole wheat pasta is done, drain it and throw it in the big bowl and toss.

This makes about 10 servings, 2 cups each (I measured out 11 cups total in the end)
Sprinkle with more parsley and serve.

About Nutritional Yeast:

First, it’s not brewers yeast, so don’t go buying that stuff! Here’s a link that explains what it is and if you can’t find it in the healthy section of your regular grocery store, usually in the bins, you can buy it here.

Now don’t be all NOOOOO!!! about this. Hear me out. I used to eat nutritional yeast all the time when I was a vegan many years ago, and didn’t want to eat regular cheese. I love this stuff SO much, that, given a choice between tortilla chips and melted cheese with salsa and tortilla chips and nutritional yeast cheesy-like spread with salsa, I’ll RUN for the nutritional yeast. No, it doesn’t taste exactly like cheese, so don’t expect that..it has a nutty, cheesy, interesting taste that is just wonderful. And that’s, standing on it’s own as a sauce.

If you mix nutritional yeast in soups, or stews or in pasta dishes as I did here, you really CAN’T taste a lot of difference and no one will know. What you do taste is a faint cheesy taste and it creates a sort of a creamy sauce to anything you add it to, which really helps out when you want something creamy and rich!!!
