Whole Wheat Blueberry Muffins

I had some blueberries in the fridge that I’d bought at Trader Joe’s that I really needed to use up so created this whole wheat blueberry muffin recipe and it turned out quite nicely.

3 c. whole wheat flour
2 t. Baking powder
1 t. baking soda
1 T. lemon juice
1/2 c. plain yogurt
2/3 c. applesauce, no sugar added
1/3 c. nonfat milk
1/2 c. or so of water
1/3 c. of honey
4 c. of blueberries

Oven at 350 degrees. Spray muffin pans with nonstick spray and fill the cups about 1/2 full or a little more than half full. This recipe makes about 24 muffins that freeze well for snacks or lunches to take to work or school.
